I served this with a sesame seed bun, fresh cilantro & pickles (without Yellow 5 listed as an ingredient). YUM!

Ingredients
  1. 2 Bell Peppers (red, green, yellow or orange)
  2. 1 Red Onion
  3. 2 Jalapeno Peppers
  4. 2 tbsp Garlic, crushed
  5. 1 tsp Cumin Seeds
  6. 2 tbsp Coconut Oil
  7. 1 Can Black Beans, 16 oz
  8. 1 tsp Red Pepper Flakes
  9. 2 tsp Cumin
  10. 2 tsp Coriander
  11. 1 1/2 tsp Salt
  12. 1 tsp Pepper
  13. 2 tbsp Liquid Aminos
  14. 2 tbsp Apple Cider Vinegar
  15. 2 tbsp Maple Syrup
  16. 2 tbsp Tomato Paste
  17. 1 Box Crushed Tomatoes, 26oz.
Toppings
  1. Cilantro, Fresh
  2. Pickles, Chopped
Instructions
  1. Chop vegetables (remove seeds from peppers).
  2. Saute vegetables with garlic, cumin seeds and coconut oil in large sauce pan or dutch oven for 8-10 minutes. Onions should be slightly translucent.
  3. Drain black beans & add the beans and remaining spices to the pan. Cook for another 2-3 minutes.
  4. Add tomatoes, tomato paste, vinegar, lime, liquid aminos and maple syrup.
  5. Simmer over low heat for 15-20 minutes before serving.
  6. Top with cilantro and chopped pickles.
