Paleo Banana Bread

My second Mother’s Day was great! The day started out with a scavenger hunt (e.g. finding Mason’s art, cards and a gift card to a local spa). The cutest part was my husband outlined Mason’s hand (20 months) and his own hand (434 months). His sense of humor is the BEST! Oh and I cannot wait to get a massage & pedicure. Lord knows my running feet sure could use one! 

After the scavenger hunt, we had a great breakfast with my sister, mom, my mom’s fiance and his daughter. My mom and finance recently got engaged so we are starting to incorporate the two families together for holidays. I am not very good at change, but I feel like I am embracing this much better than I would have 5-10 years ago. I guess time will tell :) 

For my mom’s gift I made a Shutterfly book of Mason and this YUMMY Paleo banana bread! I like to make little sandwiches out of this bread with peanut butter and bananas or even use it the next day for french toast.

This bread is moist and delicious. I love having a slice with some almond butter for breakfast.

Ingredients
  1. 2 Bananas, ripe
  2. 2 Eggs
  3. 1/4 C Agave Nectar
  4. 1/2 tbsp Vanilla
  5. 2 tbsp Almond Butter
  6. 2 tbsp Butter, softened
  7. 1/4 C Coconut Flour
  8. 3/4 C Almond Flour
  9. 1/4 tsp Nutmeg
  10. 1 tsp Cinnamon
  11. 1/2 tsp Salt
  12. 3/4 tsp Baking Soda
  13. 3/4 tsp Baking Powder
Instructions
  1. Preheat oven to 350 degrees.
  2. Add bananas, eggs, vanilla, butter, agave nectar and almond butter to a food processor. Combine for 1 minute.
  3. Add in coconut flour, almond flour, baking soda, baking powder, salt, cinnamon & nutmeg. Process for another minute until combined.
  4. Grease 9X5 bread pan.
  5. Pour batter into pan & bake for 45 minutes or until golden brown.
  6. Cool for 10 minutes.
  7. Transfer to cooling rack.
